Ingredients

  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 4 cloves of garlic, minced
  • 2 tablespoons of all-purpose flour
  • 2 cups of chicken broth
  • 1/2 cup of buffalo sauce
  • 1/2 cup of blue cheese crumbles
  • 3 cups of cooked chicken, chopped
  • Salt and pepper, to taste
  • Sour cream, for garnish
  • Green onion, for garnish

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until it is softened, about 5 minutes.
  2. Add the minced garlic and sauté for an additional minute, stirring often.
  3. Sprinkle the flour into the pot and stir to combine. Cook for an additional minute.
  4. Slowly pour in the chicken broth and stir until combined. Turn the heat up to medium-high and bring the soup to a boil.
  5. Reduce the heat to a simmer and stir in the buffalo sauce, blue cheese crumbles, and cooked chicken. Simmer for 10-15 minutes, stirring occasionally.
  6. Taste the soup and season with salt and pepper, if needed.
  7. Ladle the soup into bowls and garnish with sour cream and green onions, if desired.
