Ingredients

  • ½ cup butter, melted
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1½ cups all-purpose flour
  • ¼ cup cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup shredded zucchini
  • ½ cup semi-sweet chocolate chips
  • For the cream cheese frosting:
  • 4 ounces cream cheese, softened
  • 2 tablespoons butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Directions

  1. Preheat oven to 350 degrees F.
  2. Grease an 8×8 inch baking dish with butter or cooking spray.
  3. In a large bowl, whisk together the melted butter and sugar until combined. Add in the vanilla and eggs and stir until combined.
  4. In a separate bowl, mix together the flour, cocoa powder, baking powder, and salt. Add the dry ingredients to the wet ingredients and stir until combined.
  5. Stir in the shredded zucchini and chocolate chips until evenly distributed.
  6. Pour the batter into the prepared baking dish and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Remove from oven and allow to cool completely before frosting.
  9. To make the frosting, beat together the cream cheese, butter, and vanilla extract until light and fluffy. Slowly add in the powdered sugar, and beat until combined.
