4 boneless, skinless chicken breasts, cut into strips
1/4 cup vegetable oil
2 tablespoons soy sauce
2 tablespoons freshly grated ginger
2 cloves garlic, minced
2 tablespoons brown sugar
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon ground turmeric
1/2 teaspoon ground chili powder
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon ground nutmeg
salt and pepper to taste
wooden skewers, soaked in water for 30 minutes
Directions
In a large bowl, combine the chicken strips, oil, soy sauce, ginger, garlic, brown sugar, coriander, cumin, turmeric, chili powder, cinnamon, cardamom, nutmeg, salt, and pepper.
Stir to combine, and then cover the bowl with plastic wrap. Refrigerate for at least 30 minutes, or up to 2 hours.
Once the chicken has marinated, preheat a grill or grill pan to medium-high heat.
Thread the chicken strips onto the skewers, and then grill for 3-4 minutes per side, or until the chicken is cooked through.
Serve the chicken satay with peanut sauce.
