Ingredients
- 4 boneless, skinless chicken breasts, cut into strips
- 1/4 cup vegetable oil
- 2 tablespoons soy sauce
- 2 tablespoons freshly grated ginger
- 2 cloves garlic, minced
- 2 tablespoons brown sugar
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground chili powder
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground nutmeg
- salt and pepper to taste
- wooden skewers, soaked in water for 30 minutes
Directions
- In a large bowl, combine the chicken strips, oil, soy sauce, ginger, garlic, brown sugar, coriander, cumin, turmeric, chili powder, cinnamon, cardamom, nutmeg, salt, and pepper.
- Stir to combine, and then cover the bowl with plastic wrap. Refrigerate for at least 30 minutes, or up to 2 hours.
- Once the chicken has marinated, preheat a grill or grill pan to medium-high heat.
- Thread the chicken strips onto the skewers, and then grill for 3-4 minutes per side, or until the chicken is cooked through.
- Serve the chicken satay with peanut sauce.
