Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/2 cup packed brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup pureed pumpkin
  • 1 1/2 cups grated zucchini

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, beat together the oil, brown sugar, white sugar, eggs, vanilla extract, pumpkin, and zucchini.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared pan.
  6. Bake for 45 to 50 minutes in the preheated oven, or until a toothpick inserted into the center of the loaf comes out clean.
  7. Cool in the pan for at least 10 minutes before removing to finish cooling.
