Ingredients
2 cups warm water
1/2 cup molasses
2 tablespoons active dry yeast
1/4 cup olive oil
2 teaspoons salt
2 tablespoons caraway seeds
4-5 cups rye flour
Directions
In a large bowl, combine the warm water, molasses, and yeast. Let the mixture sit for 10 minutes until the yeast has activated.
Add the olive oil, salt, caraway seeds and 4 cups of the rye flour. Stir until the dough starts to come together.
Turn the dough out onto a floured surface and knead for 10 minutes, adding more flour if necessary. The dough should be smooth and elastic.
Place the dough into a greased bowl, cover with plastic wrap and let rise in a warm place for 1 hour.
Punch down the dough and shape into two loaves. Place on a greased baking sheet and let rise for an additional 30 minutes.
Preheat oven to 350°F (180°C).
Bake the loaves for 45 minutes or until golden brown and the loaves sound hollow when tapped.
Let cool on a wire rack before slicing.
