Ingredients

  • 2 cups warm water
  • 1/2 cup molasses
  • 2 tablespoons active dry yeast
  • 1/4 cup olive oil
  • 2 teaspoons salt
  • 2 tablespoons caraway seeds
  • 4-5 cups rye flour

Directions

  1. In a large bowl, combine the warm water, molasses, and yeast. Let the mixture sit for 10 minutes until the yeast has activated.
  2. Add the olive oil, salt, caraway seeds and 4 cups of the rye flour. Stir until the dough starts to come together.
  3. Turn the dough out onto a floured surface and knead for 10 minutes, adding more flour if necessary. The dough should be smooth and elastic.
  4. Place the dough into a greased bowl, cover with plastic wrap and let rise in a warm place for 1 hour.
  5. Punch down the dough and shape into two loaves. Place on a greased baking sheet and let rise for an additional 30 minutes.
  6. Preheat oven to 350°F (180°C).
  7. Bake the loaves for 45 minutes or until golden brown and the loaves sound hollow when tapped.
  8. Let cool on a wire rack before slicing.
