Preheat oven to 375 degrees F. Cut spaghetti squash in half lengthwise, and scoop out the seeds. Place squash halves cut-side down on a baking sheet. Bake for 25 minutes, or until tender.
Meanwhile, heat olive oil in a large skillet over medium-high heat. Add onion, bell pepper, jalapeno pepper, and garlic. Cook, stirring frequently, until vegetables are tender, about 5 minutes.
Stir in cumin and smoked paprika. Cook for 1 minute.
Add black beans, corn, and cilantro. Cook for 2 minutes.
Remove spaghetti squash from oven and let cool. Use a fork to scrape the flesh of the squash into the skillet. Stir to combine. Season with salt and pepper, to taste.
Serve warm.
