Ingredients

  • 1¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoons butter, melted
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¾ cup buttermilk
  • 1 cup diced peaches and nectarines, fresh or frozen

Directions

  1. Preheat oven to 375°F. Grease a 12-cup muffin tin with butter or nonstick cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, whisk together the melted butter and sugar. Whisk in the egg and vanilla extract until combined.
  4. Add the buttermilk to the butter mixture and whisk until combined.
  5. Add the dry ingredients to the wet ingredients and whisk until just combined. Do not overmix.
  6. Fold in the peaches and nectarines.
  7. Divide the batter evenly among the prepared muffin cups. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let cool in the muffin tin for 5 minutes, then transfer to a wire rack to cool completely.
