Ingredients
2 tablespoons olive oil
1 large onion, chopped
4 cloves garlic, minced
2 tablespoons smoked paprika
1 teaspoon chili flakes
1 pound collard greens, chopped
1/2 cup vegetable broth
Salt and pepper to taste
Directions
Heat the olive oil in a large skillet over medium heat.
Add the onion and garlic and cook until softened, about 5 minutes.
Add the smoked paprika and chili flakes and cook for another minute.
Add the collard greens and vegetable broth and stir to combine.
Reduce the heat to low and cover the skillet. Cook for 15 minutes, stirring occasionally.
Remove the lid and cook until the greens are tender, about 10 minutes.
Season with salt and pepper to taste.
Serve warm.
