Ingredients
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3 teaspoons ground cinnamon
- 3 eggs
- 2 cups white sugar
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
- 2 cups grated zucchini
- 1 cup chopped walnuts
Directions
- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, combine flour, salt, baking powder, baking soda and cinnamon. In a separate bowl, beat eggs, sugar, oil, and vanilla until creamy.
- Stir in zucchini. Add flour mixture to the creamed mixture and stir just until blended. Fold in walnuts.
- Pour batter into prepared pan.
- Bake for 60 to 70 minutes, or until tester inserted in center comes out clean. Cool in pan on a rack for 20 minutes. Remove from pan, and cool completely.
