Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x5 inch loaf pan.
In a large bowl, combine flour, salt, baking powder, baking soda and cinnamon. In a separate bowl, beat eggs, sugar, oil, and vanilla until creamy.
Stir in zucchini. Add flour mixture to the creamed mixture and stir just until blended. Fold in walnuts.
Pour batter into prepared pan.
Bake for 60 to 70 minutes, or until tester inserted in center comes out clean. Cool in pan on a rack for 20 minutes. Remove from pan, and cool completely.
