Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups sweet potato, peeled and diced
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
- 1 cup cooked shrimp, cut into bite-sized pieces
- 1 cup cooked crabmeat
- 2 tablespoons fresh parsley, chopped
Directions
- In a large pot, heat the oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the sweet potato and cook for another 5 minutes, stirring occasionally.
- Add the vegetable broth, thyme, smoked paprika, salt, and pepper. Bring to a boil, reduce heat to low, and simmer for 15 minutes, stirring occasionally.
- Stir in the cream and cook for 5 minutes, stirring occasionally.
- Add the shrimp and crabmeat and cook for 5 minutes, stirring occasionally.
- Stir in the parsley and cook for another 5 minutes, stirring occasionally.
- Serve hot.
