Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups sweet potato, peeled and diced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1 cup cooked shrimp, cut into bite-sized pieces
  • 1 cup cooked crabmeat
  • 2 tablespoons fresh parsley, chopped

Directions

  1. In a large pot, heat the oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the sweet potato and cook for another 5 minutes, stirring occasionally.
  3. Add the vegetable broth, thyme, smoked paprika, salt, and pepper. Bring to a boil, reduce heat to low, and simmer for 15 minutes, stirring occasionally.
  4. Stir in the cream and cook for 5 minutes, stirring occasionally.
  5. Add the shrimp and crabmeat and cook for 5 minutes, stirring occasionally.
  6. Stir in the parsley and cook for another 5 minutes, stirring occasionally.
  7. Serve hot.
