Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x5 inch loaf pan.
In a medium bowl, sift together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the sour cream. Fold in the apples.
Pour batter into prepared loaf pan. Bake in preheated oven for 60 minutes, or until a knife inserted into the center of the loaf comes out clean.
Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
