Ingredients
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 500g mushrooms, chopped
- 1 teaspoon dried thyme
- 1 tablespoon fresh parsley, finely chopped
- 1 tablespoon tomato paste
- 1 teaspoon smoked paprika
- 400g can chopped tomatoes
- 250g smoked haddock fillet
- 100g mature cheddar cheese, grated
- 2 tablespoons fresh breadcrumbs
Directions
- Preheat the oven to 200°C/400°F/Gas Mark 6.
- Heat the olive oil in a large frying pan over a medium heat.
- Add the onion and garlic and cook for 4-5 minutes until softened.
- Add the mushrooms and cook for a further 5 minutes.
- Stir in the thyme, parsley, tomato paste and smoked paprika and cook for 1 minute.
- Add the chopped tomatoes and cook for a further 10 minutes.
- Remove the pan from the heat and transfer the mixture to an ovenproof dish.
- Place the haddock fillets on top of the mushroom mixture and sprinkle with the grated cheese.
- Sprinkle the breadcrumbs over the top of the cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is golden and bubbling.
