High Protein Chicken Taco Egg Mini Muffins
Ingredients
2 tablespoons olive oil
1 onion, finely chopped
2 cloves garlic, minced
500g mushrooms, chopped
1 teaspoon dried thyme
1 tablespoon fresh parsley, finely chopped
1 tablespoon tomato paste
1 teaspoon smoked paprika
400g can chopped tomatoes
250g smoked haddock fillet
100g mature cheddar cheese, grated
2 tablespoons fresh breadcrumbs
Directions
Preheat the oven to 200°C/400°F/Gas Mark 6.
Heat the olive oil in a large frying pan over a medium heat.
Add the onion and garlic and cook for 4-5 minutes until softened.
Add the mushrooms and cook for a further 5 minutes.
Stir in the thyme, parsley, tomato paste and smoked paprika and cook for 1 minute.
Add the chopped tomatoes and cook for a further 10 minutes.
Remove the pan from the heat and transfer the mixture to an ovenproof dish.
Place the haddock fillets on top of the mushroom mixture and sprinkle with the grated cheese.
Sprinkle the breadcrumbs over the top of the cheese.
Bake in the preheated oven for 25-30 minutes, or until the cheese is golden and bubbling.
