Ingredients

  • 1 pound pork shoulder, cubed
  • 2 tablespoons achiote paste
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup orange juice
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup chopped cilantro

Directions

  1. In a medium bowl, mix together the achiote paste, garlic, olive oil, orange juice, cumin, oregano, salt, pepper, cloves, cinnamon, and cayenne pepper.
  2. Add the pork cubes to the mixture and stir to coat. Cover and refrigerate for at least 1 hour or overnight.
  3. Heat a large skillet over medium-high heat. Add the pork and marinade to the skillet and cook until the pork is cooked through, about 8-10 minutes, stirring occasionally.
  4. Stir in the cilantro and cook for an additional 2 minutes. Serve with warm corn tortillas and your favorite toppings.
