Ingredients
- 1 pound pork shoulder, cubed
- 2 tablespoons achiote paste
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 cup orange juice
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground cloves
- 1/4 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- 1/4 cup chopped cilantro
Directions
- In a medium bowl, mix together the achiote paste, garlic, olive oil, orange juice, cumin, oregano, salt, pepper, cloves, cinnamon, and cayenne pepper.
- Add the pork cubes to the mixture and stir to coat. Cover and refrigerate for at least 1 hour or overnight.
- Heat a large skillet over medium-high heat. Add the pork and marinade to the skillet and cook until the pork is cooked through, about 8-10 minutes, stirring occasionally.
- Stir in the cilantro and cook for an additional 2 minutes. Serve with warm corn tortillas and your favorite toppings.
