Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of dried oregano
  • 1 teaspoon of ground cumin
  • 1 teaspoon of chili powder
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of sea salt
  • 1/4 teaspoon of black pepper
  • 1 tablespoon of olive oil
  • 2 peaches, pitted and diced
  • 1/2 cup of pitted cherries, diced
  • 1/4 cup of diced red onion
  • 1 jalapeno, seeded and diced
  • 2 tablespoons of lime juice
  • 1 tablespoon of honey
  • 1/4 cup of chopped fresh cilantro

Directions

  1. In a small bowl, combine the garlic powder, onion powder, oregano, cumin, chili powder, smoked paprika, sea salt, and black pepper. Mix to combine.
  2. Rub the mixture onto the chicken thighs. Drizzle with olive oil and set aside.
  3. In a medium bowl, combine the diced peaches, cherries, red onion, jalapeno, lime juice, honey, and cilantro. Mix to combine.
  4. Preheat your grill to medium-high heat.
  5. Grill the chicken thighs for 5-7 minutes per side, or until the chicken is cooked through.
  6. Serve the chicken with the peach and cherry salsa.
