Yuppie-Kolcannon is a trendy take on the classic Irish dish, combining mashed potatoes with kale, leeks, and a touch of sophistication. This dish is perfect for a cozy night in or a fancy dinner party with friends.

Ingredients

  • 4 large russet potatoes, peeled and diced
  • 1 bunch kale, stems removed and leaves chopped
  • 2 leeks, sliced thinly
  • 4 tbsp butter
  • 1/2 cup milk
  • Salt and pepper to taste

Directions

  1. Boil the potatoes in a large pot of salted water until tender, about 15 minutes. Drain and set aside.
  2. In a separate pot, bring water to a boil and blanch the kale for 2 minutes. Drain and set aside.
  3. In a large skillet, melt 2 tbsp of butter over medium heat. Add the leeks and sauté until soft, about 5 minutes.
  4. Add the kale to the skillet and cook for another 2 minutes, stirring occasionally.
  5. Mash the cooked potatoes in a mixing bowl. Add the remaining butter and milk, mixing until smooth.
