Ingredients
- 1 tablespoon butter
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup wild rice
- 4 cups chicken broth
- 1 carrot, peeled and diced
- 1 celery stalk, diced
- 1 cup cooked chicken, diced
- 1 teaspoon thyme
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup heavy cream
Directions
- Melt butter in a pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
- Add wild rice, chicken broth, carrot, celery, chicken, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 25 minutes.
- Stir in cream and cook for an additional 5 minutes.
- Serve hot.
