Ingredients

  • 1 tablespoon butter
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup wild rice
  • 4 cups chicken broth
  • 1 carrot, peeled and diced
  • 1 celery stalk, diced
  • 1 cup cooked chicken, diced
  • 1 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup heavy cream

Directions

  1. Melt butter in a pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  2. Add wild rice, chicken broth, carrot, celery, chicken, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 25 minutes.
  3. Stir in cream and cook for an additional 5 minutes.
  4. Serve hot.
