Ingredients
1 tablespoon butter
1 onion, diced
2 cloves garlic, minced
1 cup wild rice
4 cups chicken broth
1 carrot, peeled and diced
1 celery stalk, diced
1 cup cooked chicken, diced
1 teaspoon thyme
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup heavy cream
Directions
Melt butter in a pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
Add wild rice, chicken broth, carrot, celery, chicken, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 25 minutes.
Stir in cream and cook for an additional 5 minutes.
Serve hot.
