Ingredients
2 pounds red bliss potatoes
3/4 cup mayonnaise
1/2 cup sour cream
1/4 cup Gorgonzola cheese, crumbled
1/4 cup toasted walnuts, chopped
2 green onions, chopped
3 tablespoons apple cider vinegar
1 teaspoon sugar
Salt and pepper to taste
Directions
Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 minutes. Drain and rinse with cold water.
In a large bowl, combine mayonnaise, sour cream, Gorgonzola cheese, walnuts, green onions, vinegar, sugar, salt and pepper. Mix until combined.
Cut potatoes into bite-sized pieces and add to the mayonnaise mixture. Stir until evenly combined.
Cover and refrigerate for at least 1 hour before serving.
