Ingredients

  • 2 pounds red bliss potatoes
  • 3/4 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup Gorgonzola cheese, crumbled
  • 1/4 cup toasted walnuts, chopped
  • 2 green onions, chopped
  • 3 tablespoons apple cider vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste

Directions

  1. Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 minutes. Drain and rinse with cold water.
  2. In a large bowl, combine mayonnaise, sour cream, Gorgonzola cheese, walnuts, green onions, vinegar, sugar, salt and pepper. Mix until combined.
  3. Cut potatoes into bite-sized pieces and add to the mayonnaise mixture. Stir until evenly combined.
  4. Cover and refrigerate for at least 1 hour before serving.
