Ingredients

  • 2 cups whole-wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, melted
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1/2 cup walnuts, chopped
  • 1/2 cup dried cranberries

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with muffin papers.
  2. In a medium bowl, mix together the whole-wheat flour, baking powder, baking soda and salt.
  3. In a large bowl, cream together the melted butter and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the buttermilk; stir until just blended. Fold in the walnuts and dried cranberries.
  4. Spoon the batter into the prepared muffin cups. Bake for 20 to 25 minutes in the preheated oven, or until a toothpick inserted into the center of a muffin comes out clean.
