Ingredients
- 2 cups whole-wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter, melted
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1/2 cup walnuts, chopped
- 1/2 cup dried cranberries
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with muffin papers.
- In a medium bowl, mix together the whole-wheat flour, baking powder, baking soda and salt.
- In a large bowl, cream together the melted butter and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the buttermilk; stir until just blended. Fold in the walnuts and dried cranberries.
- Spoon the batter into the prepared muffin cups. Bake for 20 to 25 minutes in the preheated oven, or until a toothpick inserted into the center of a muffin comes out clean.
