Ingredients

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 6 tablespoons cold butter, cut into small pieces
  • 1 cup fresh blueberries
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flours, sugar, baking powder, baking soda, and salt.
  3. Add the butter and use a pastry cutter or your fingertips to cut it into the flour mixture until it resembles coarse meal.
  4. Add the blueberries and stir until they are well coated with the flour mixture.
  5. In a small bowl, whisk together the yogurt, vanilla extract, and 1/4 cup of cold water.
  6. Add the wet ingredients to the dry ingredients and stir until just combined.
  7. Turn the dough out onto a lightly floured surface and knead gently 4-5 times.
  8. Pat the dough into a circle about 1 inch thick and cut into 8 wedges. Place the wedges on the prepared baking sheet.
  9. Bake for 15-20 minutes, or until the scones are golden brown.
  10. Let cool for 5 minutes before serving.
