Ingredients

  • 1 lb ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups vegetable broth
  • 1 cup red lentils
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 1 can (14.5 oz) black beans, drained and rinsed
  • 2 cups chopped kale
  • 1/4 cup chopped fresh cilantro

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the ground turkey and cook, stirring occasionally, until browned, about 5 minutes.
  2. Add the onion, garlic, curry powder, cumin, ginger, coriander, turmeric, salt, and pepper, and cook until the vegetables are softened, about 5 minutes.
  3. Add the vegetable broth, lentils, tomatoes with their juices, and black beans. Bring to a boil, then reduce the heat to low and simmer, stirring occasionally, for 20 minutes.
  4. Stir in the kale and cilantro, and cook for another 5 minutes.
  5. Serve hot.
