Ingredients
- 1 lb ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons curry powder
- 1 teaspoon cumin
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups vegetable broth
- 1 cup red lentils
- 1 can (14.5 oz) diced tomatoes, with juices
- 1 can (14.5 oz) black beans, drained and rinsed
- 2 cups chopped kale
- 1/4 cup chopped fresh cilantro
Directions
- In a large pot, heat the olive oil over medium heat. Add the ground turkey and cook, stirring occasionally, until browned, about 5 minutes.
- Add the onion, garlic, curry powder, cumin, ginger, coriander, turmeric, salt, and pepper, and cook until the vegetables are softened, about 5 minutes.
- Add the vegetable broth, lentils, tomatoes with their juices, and black beans. Bring to a boil, then reduce the heat to low and simmer, stirring occasionally, for 20 minutes.
- Stir in the kale and cilantro, and cook for another 5 minutes.
- Serve hot.
