Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
In a large bowl, cream together butter and sugar until light and fluffy. Add eggs, one at a time, mixing well after each addition.
Sift together flour, baking powder, baking soda, and salt. Add to creamed mixture alternately with buttermilk, beginning and ending with flour mixture. Mix until just combined. Stir in vanilla extract.
Divide batter evenly between two bowls. To one bowl, add maple syrup and enough red food coloring to achieve desired color. Stir until combined. To the other bowl, add white chocolate chips. Stir until combined.
Spoon red batter into one prepared cake pan and white batter into the second pan. Bake for 25-30 minutes, or until a toothpick inserted into the center of each cake comes out clean. Let cakes cool in pans for 10 minutes before inverting onto a cooling rack to cool completely.
To make the frosting, beat together heavy cream and white chocolate chips until stiff peaks form. Spread frosting between cake layers and over the top and sides of the cake.
