Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1/2 cup champagne
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3/4 cup powdered sugar
  • 2 tablespoons butter, softened
  • 2 tablespoons champagne

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, mix together the flour, sugar, baking powder, baking soda, and salt. In a separate bowl, mix together the melted butter, eggs, champagne, and vanilla.
  3. Add the wet ingredients to the dry ingredients and mix until just combined. Pour the batter into the prepared pan.
  4. Bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  5. Allow the cake to cool for 10 minutes before removing it from the pan.
  6. In a medium bowl, mix together the powdered sugar, softened butter, and champagne until smooth. Spread the icing over the cooled cake.
