Ingredients
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 2 pounds carrots, peeled and cut into 1/4-inch thick slices
- 1/4 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon honey
Directions
- Preheat oven to 400°F (204°C).
- In a large bowl, combine olive oil, garlic, and ginger. Add in carrots and stir until evenly coated.
- Spread carrots onto a baking sheet and sprinkle with salt and pepper.
- Bake for 15 minutes, then remove from oven and drizzle with honey.
- Return to oven and bake for another 10-15 minutes until carrots are tender and lightly browned.
- Serve warm and enjoy!
