Sriracha Chicken with Scallions
Ingredients
1 lb. sirloin steak, cut into 1-inch cubes
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 red onion, cut into 1-inch pieces
1/4 cup olive oil
2 cloves minced garlic
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1/4 cup freshly squeezed lime juice
1/4 cup freshly squeezed orange juice
1/4 cup freshly chopped cilantro
Directions
In a large bowl, combine the sirloin, bell peppers, and onion.
In a separate bowl, whisk together the olive oil, garlic, cumin, paprika, salt, pepper, lime juice, orange juice, and cilantro.
Pour the marinade over the steak and vegetables and toss to coat. Cover the bowl and place in the refrigerator to marinate for 30 minutes.
Preheat the grill to medium-high heat.
Thread the steak and vegetables onto skewers. Grill for 10-12 minutes, turning every few minutes, until cooked through and lightly charred.
Serve with your favorite side dish.
