Ingredients
- 3 large eggs
- 2 tablespoons olive oil
- 1/2 onion, diced
- 1 red bell pepper, diced
- 1/2 teaspoon cumin
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 2 potatoes, diced
- 1/4 cup vegetable broth
- 1/4 cup chopped fresh cilantro (optional)
Directions
- Crack the eggs into a bowl and whisk until smooth.
- Heat the oil in a large skillet over medium heat. Add the onion and bell pepper and cook for 5 minutes, stirring occasionally.
- Add the cumin, smoked paprika, garlic powder, and salt and cook for another minute.
- Add the potatoes and cook for 5 minutes, stirring occasionally.
- Add the eggs and vegetable broth and cook for 5 minutes, stirring occasionally.
- Garnish with fresh cilantro, if desired, and serve.
