Ingredients

  • 3 large eggs
  • 2 tablespoons olive oil
  • 1/2 onion, diced
  • 1 red bell pepper, diced
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 2 potatoes, diced
  • 1/4 cup vegetable broth
  • 1/4 cup chopped fresh cilantro (optional)

Directions

  1. Crack the eggs into a bowl and whisk until smooth.
  2. Heat the oil in a large skillet over medium heat. Add the onion and bell pepper and cook for 5 minutes, stirring occasionally.
  3. Add the cumin, smoked paprika, garlic powder, and salt and cook for another minute.
  4. Add the potatoes and cook for 5 minutes, stirring occasionally.
  5. Add the eggs and vegetable broth and cook for 5 minutes, stirring occasionally.
  6. Garnish with fresh cilantro, if desired, and serve.
