Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 2 cups long grain white rice
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon dried oregano
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

  1. Preheat oven to 350°F. Grease a 9x13 inch baking dish with cooking spray.
  2. In a large bowl, combine the chicken broth, garlic powder, onion powder, salt, black pepper, smoked paprika, cayenne pepper, and long grain white rice. Stir to combine.
  3. Add the chicken breasts to the baking dish and top with the rice mixture. Drizzle the olive oil over the top and sprinkle with the turmeric, oregano, and parsley. Cover the baking dish with aluminum foil.
  4. Bake for 25-30 minutes, or until the chicken is cooked through and the rice is tender. Serve hot.
