Ingredients
- 4 chicken breasts, cubed
- 2 potatoes, cubed
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of curry powder
- 1 teaspoon of turmeric
- 1 teaspoon of garam masala
- 1 teaspoon of cumin
- 1/2 teaspoon of black pepper
- 1 teaspoon of salt
- 1 cup of coconut milk
- 1/4 cup of vegetable oil
- 1/4 cup of fresh cilantro, chopped
Directions
- Heat the oil in a large skillet over medium heat.
- Add the onion and garlic and sauté until fragrant, about 2 minutes.
- Add the chicken and potatoes and cook for 5 minutes.
- Add the curry powder, turmeric, garam masala, cumin, black pepper, and salt and mix to combine.
- Add the coconut milk and bring to a simmer.
- Reduce the heat to low and simmer for 20 minutes, stirring occasionally.
- Garnish with the cilantro and serve.
