Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • ½ cup applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups diced apples (about 2-3 apples)
  • 1 cup chopped walnuts (optional)

Directions

  1. Preheat oven to 350°F.
  2. Grease and flour a 9x13-inch baking pan.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  4. In a large bowl, combine sugar, oil, applesauce, eggs, and vanilla extract. Beat until well blended.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in apples and walnuts (if desired).
  7. Pour batter into the prepared baking pan and spread evenly.
  8. Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool in pan for 10 minutes, then remove and cool completely on a wire rack.
