Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 2 packages (8 oz each) cream cheese, softened
  • 1 cup white sugar
  • 2 teaspoons vanilla extract
  • 3 eggs
  • 1/2 cup white chocolate chips
  • 1/4 cup brandy
  • 1/2 cup heavy cream
  • 1/4 cup white sugar
  • 1/4 cup brandy

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1 tablespoon of sugar. Press into the prepared springform pan and bake for 8 minutes.
  3. In a large bowl, beat cream cheese, 1 cup sugar, and vanilla extract until smooth. Add eggs one at a time, beating after each addition. Stir in white chocolate chips.
  4. Pour filling into prepared crust and bake for 40 minutes. Allow to cool for 10 minutes before removing from pan.
  5. In a small saucepan over low heat, melt 1/4 cup of white chocolate chips with 1/4 cup of brandy. Stir in 1/2 cup of heavy cream and 1/4 cup of sugar. Bring to a boil and cook for 1 minute. Remove from heat and stir in 1/4 cup of brandy.
  6. Pour sauce over cheesecake and chill for at least 2 hours before serving.
