Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan.
In a medium bowl, combine graham cracker crumbs, melted butter, and 1 tablespoon of sugar. Press into the prepared springform pan and bake for 8 minutes.
In a large bowl, beat cream cheese, 1 cup sugar, and vanilla extract until smooth. Add eggs one at a time, beating after each addition. Stir in white chocolate chips.
Pour filling into prepared crust and bake for 40 minutes. Allow to cool for 10 minutes before removing from pan.
In a small saucepan over low heat, melt 1/4 cup of white chocolate chips with 1/4 cup of brandy. Stir in 1/2 cup of heavy cream and 1/4 cup of sugar. Bring to a boil and cook for 1 minute. Remove from heat and stir in 1/4 cup of brandy.
Pour sauce over cheesecake and chill for at least 2 hours before serving.
