Ingredients

  • 3 lbs. chicken pieces
  • 1 1/2 cups buttermilk
  • 1/3 cup barbeque sauce
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup vegetable oil

Directions

  1. In a large bowl, mix together the buttermilk, barbeque sauce, garlic powder, onion powder, smoked paprika, black pepper, and salt. Add the chicken pieces and toss to coat. Cover the bowl and refrigerate for at least 2 hours.
  2. Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  3. In a shallow bowl, mix together the flour, cornstarch, baking powder, baking soda, and cayenne pepper. Remove the chicken pieces from the marinade and coat them in the flour mixture.
  4. Place the chicken on the prepared baking sheet and drizzle the vegetable oil over the top. Bake for 25-30 minutes, or until the chicken is golden brown and cooked through.
  5. Serve warm with your favorite sides.
