Ingredients
1 tablespoon olive oil
1 onion, diced
1 bell pepper, diced
3 cloves garlic, minced
2 teaspoons cumin
2 teaspoons chili powder

Directions
Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes.
Add the garlic, cumin, chili powder, smoked paprika, oregano, cayenne pepper, black pepper, and salt and cook for an additional 1-2 minutes.
Transfer the mixture to a slow cooker.
Add the red beans, vegetable broth, tomato paste, and bay leaf and stir to combine.
Cover and cook on low heat for 4-6 hours, or until the beans are soft.
Discard the bay leaf and season with additional salt and pepper, if desired.
Serve over cooked rice.
