Ingredients

  • 4 bell peppers, halved and seeded
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese

Directions

  1. Preheat oven to 350°F.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for 5 minutes.
  3. Add the cooked rice, black beans, corn, chili powder, cumin, salt, and black pepper to the skillet and stir to combine. Cook for another 5 minutes.
  4. Stuff each bell pepper half with the rice mixture and top with cheese.
  5. Place on a baking sheet and bake for 20 minutes.
  6. Serve and enjoy!
