Ingredients
4 bell peppers, halved and seeded
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 cup cooked rice
1 can black beans, drained and rinsed
1 can corn, drained
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheddar cheese
Directions
Preheat oven to 350°F.
In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for 5 minutes.
Add the cooked rice, black beans, corn, chili powder, cumin, salt, and black pepper to the skillet and stir to combine. Cook for another 5 minutes.
Stuff each bell pepper half with the rice mixture and top with cheese.
Place on a baking sheet and bake for 20 minutes.
Serve and enjoy!
