Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes with juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper, to taste
  • 1 lb fresh green beans, trimmed and cut into 1-inch pieces
  • 1 tablespoon chopped fresh parsley (optional)

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the tomatoes, chili powder, cumin, cayenne pepper, salt, and pepper and bring to a simmer. Cook for 5 minutes.
  3. Add the green beans and cook until tender, about 8 minutes.
  4. Stir in the parsley, if using, and serve.
