Ingredients

  • 1 pound mini potatoes
  • 1/2 cup Gorgonzola cheese, crumbled
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Preheat oven to 400°F.
  2. In a medium bowl, combine the olive oil, garlic powder, dried parsley, salt, and black pepper. Mix until combined.
  3. Add the mini potatoes to the bowl and mix until all the potatoes are coated in the seasoning mixture.
  4. Spread the potatoes in an even layer on a baking sheet and bake for 15 minutes.
  5. After 15 minutes, remove the potatoes from the oven and top each potato with a small amount of Gorgonzola cheese.
  6. Return the potatoes to the oven and bake for an additional 10 minutes, or until the cheese is melted and the potatoes are cooked through.
  7. Serve warm.
