Ingredients

  • 1/2 cup (110g) butter, at room temperature
  • 1 cup (200g) sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups (450g) ricotta cheese
  • 1/2 cup (60g) all-purpose flour
  • 2 tablespoons lemon zest
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt

Directions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch (23 cm) springform pan with butter.
  2. In a large bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition.
  3. Stir in the vanilla extract and ricotta cheese until combined.
  4. In a separate bowl, whisk together the flour, lemon zest, cinnamon, nutmeg, cloves, and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Pour the mixture into the prepared pan and bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
