Ingredients

  • 4 chicken thighs
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/4 cup white wine
  • 1/2 cup chicken broth

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the chicken thighs with cumin, smoked paprika, oregano, salt and pepper.
  3. Add the chicken to the skillet and cook for about 5 minutes per side, or until golden brown and cooked through.
  4. Remove the chicken from the skillet and set aside.
  5. Add the onion, garlic, and bell peppers to the skillet and cook for 3-4 minutes, or until softened.
  6. Add the white wine and chicken broth to the skillet and stir to combine.
  7. Add the chicken back to the skillet and bring to a simmer.
  8. Reduce the heat to low and simmer for 15-20 minutes, or until the chicken is cooked through.
  9. Serve hot with rice or potatoes.
