Ingredients

  • 1 tablespoon olive oil
  • 1/2 pound Italian sausage, casing removed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • 4 cups chicken broth
  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 cup diced potatoes
  • 1/2 cup uncooked white rice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups chopped kale

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sausage and cook until it’s lightly browned, about 5 minutes.
  3. Add the onion, garlic, Italian seasoning, and red pepper flakes and cook until the onion is softened, about 5 minutes.
  4. Stir in the chicken broth, carrots, celery, potatoes, rice, salt, and pepper.
  5. Bring the soup to a boil, then reduce the heat to low and simmer for 20 minutes.
  6. Stir in the kale and cook for an additional 5 minutes.
  7. Taste and adjust the seasonings, if necessary.
  8. Serve hot.
