Ingredients
1 tablespoon olive oil
1/2 pound Italian sausage, casing removed
1 onion, diced
2 cloves garlic, minced

Directions
Heat the olive oil in a large pot over medium heat.
Add the sausage and cook until it’s lightly browned, about 5 minutes.
Add the onion, garlic, Italian seasoning, and red pepper flakes and cook until the onion is softened, about 5 minutes.
Stir in the chicken broth, carrots, celery, potatoes, rice, salt, and pepper.
Bring the soup to a boil, then reduce the heat to low and simmer for 20 minutes.
Stir in the kale and cook for an additional 5 minutes.
Taste and adjust the seasonings, if necessary.
Serve hot.
