Ingredients
- 1 tablespoon olive oil
- 1/2 pound Italian sausage, casing removed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes
- 4 cups chicken broth
- 2 carrots, peeled and diced
- 2 stalks celery, diced
- 1 cup diced potatoes
- 1/2 cup uncooked white rice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups chopped kale
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the sausage and cook until it’s lightly browned, about 5 minutes.
- Add the onion, garlic, Italian seasoning, and red pepper flakes and cook until the onion is softened, about 5 minutes.
- Stir in the chicken broth, carrots, celery, potatoes, rice, salt, and pepper.
- Bring the soup to a boil, then reduce the heat to low and simmer for 20 minutes.
- Stir in the kale and cook for an additional 5 minutes.
- Taste and adjust the seasonings, if necessary.
- Serve hot.
