Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • 2 tablespoons butter
  • 1 (3-pound) boneless pork loin
  • 1/2 cup beef broth
  • 1/4 cup all-purpose flour
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a small bowl, mix together the olive oil, garlic powder, oregano, thyme, basil, and paprika.
  3. Heat butter in a large oven-proof skillet over medium-high heat. Rub the pork loin with the olive oil mixture, then place in the skillet and brown on all sides, about 5 minutes. Place skillet in the preheated oven and bake for 45 minutes, or until pork is cooked through.
  4. Remove skillet from oven and place pork loin onto a plate. Cover pork with foil and keep warm.
  5. Pour beef broth into the skillet and bring to a simmer. Whisk in flour and stir until gravy thickens. Taste and season with salt and pepper as needed.
  6. Slice pork loin and serve with pan gravy.
