Ingredients
- 3 tablespoons butter
- 1/4 cup all-purpose flour
- 1/2 cup onion, diced
- 1/2 cup celery, diced
- 1/2 cup green pepper, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 2 cups tomato juice
- 1 teaspoon Worcestershire sauce
- 1 teaspoon hot sauce
- 2 bay leaves
- 1 teaspoon thyme
- 1/2 teaspoon cayenne pepper
- 2 cups cooked crawfish, chopped
- 1/2 cup heavy cream
- Salt and pepper, to taste
Directions
- In a large pot, melt the butter over medium heat.
- Add the onion, celery, and green pepper and sauté until the vegetables are softened, about 5 minutes.
- Add the garlic and sauté for 30 seconds.
- Add the flour and stir until the mixture is thick and paste-like.
- Gradually add the chicken broth, stirring constantly until the mixture is smooth.
- Add the tomato juice, Worcestershire sauce, hot sauce, bay leaves, thyme, and cayenne pepper and stir until combined.
- Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes, stirring occasionally.
- Add the crawfish and cream and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve hot.
