Ingredients

  • 3 tablespoons butter
  • 1/4 cup all-purpose flour
  • 1/2 cup onion, diced
  • 1/2 cup celery, diced
  • 1/2 cup green pepper, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 2 cups tomato juice
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce
  • 2 bay leaves
  • 1 teaspoon thyme
  • 1/2 teaspoon cayenne pepper
  • 2 cups cooked crawfish, chopped
  • 1/2 cup heavy cream
  • Salt and pepper, to taste

Directions

  1. In a large pot, melt the butter over medium heat.
  2. Add the onion, celery, and green pepper and sauté until the vegetables are softened, about 5 minutes.
  3. Add the garlic and sauté for 30 seconds.
  4. Add the flour and stir until the mixture is thick and paste-like.
  5. Gradually add the chicken broth, stirring constantly until the mixture is smooth.
  6. Add the tomato juice, Worcestershire sauce, hot sauce, bay leaves, thyme, and cayenne pepper and stir until combined.
  7. Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes, stirring occasionally.
  8. Add the crawfish and cream and cook for an additional 5 minutes.
  9. Season with salt and pepper to taste.
  10. Serve hot.
