Ingredients
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 2 eggs, lightly beaten
- 1 cup mashed sweet potatoes
- 1/2 cup milk
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
Directions
- Preheat oven to 350°F (175°C). Grease an 8x4-inch loaf pan.
- In a large bowl, cream together the butter and brown sugar until light and fluffy.
- Beat in the eggs, sweet potatoes, and milk until well blended.
- In a separate bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually stir the dry ingredients into the wet ingredients until just blended.
- Pour the batter into the prepared pan and bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
