Ingredients

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 2 cups vegetable broth
  • 2 cups cooked callaloo, or other leafy green vegetable
  • 2 tablespoons hot pepper sauce
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup coconut milk
  • Fresh cilantro, for garnish

Directions

  1. In a large pot, heat olive oil over medium-high heat.
  2. Add onion and garlic and cook until softened, about 5 minutes.
  3. Add coriander, cumin, paprika, thyme, and salt. Cook for another 2 minutes, stirring frequently.
  4. Add vegetable broth, cooked callaloo, hot pepper sauce, tomatoes, and black beans. Bring to a boil.
  5. Reduce heat and simmer for 10 minutes.
  6. Stir in coconut milk and cook for another 5 minutes.
  7. Serve hot, garnished with fresh cilantro.
