Directions
In a large pot, heat olive oil over medium-high heat.
Add onion and garlic and cook until softened, about 5 minutes.
Add coriander, cumin, paprika, thyme, and salt. Cook for another 2 minutes, stirring frequently.
Add vegetable broth, cooked callaloo, hot pepper sauce, tomatoes, and black beans. Bring to a boil.
Reduce heat and simmer for 10 minutes.
Stir in coconut milk and cook for another 5 minutes.
Serve hot, garnished with fresh cilantro.
