Ingredients
4 skinless halibut fillets
2 tablespoons olive oil
1 cup chopped hazelnuts
2 tablespoons fresh parsley, chopped
1 teaspoon garlic powder
1 teaspoon sea salt
1 teaspoon black pepper
2 tablespoons butter
4 cloves garlic, minced
3 cups potatoes, peeled and cubed
1 cup milk
1 tablespoon fresh chives, chopped
Directions
Preheat oven to 400 degrees F/200 degrees C.
In a shallow bowl, combine chopped hazelnuts, parsley, garlic powder, salt, and pepper.
Dip halibut fillets in olive oil and then into hazelnut mixture, pressing mixture onto both sides of the fish.
Place fish on a baking sheet and bake in preheated oven for 15 minutes, or until fish flakes easily with a fork.
Meanwhile, in a medium saucepan, melt butter over medium heat. Add garlic and sauté for 1 minute.
Add potatoes and enough water to cover. Bring to a boil, reduce heat, and simmer for 10 minutes, or until potatoes are tender.
Drain potatoes and return to pan. Mash with a potato masher, adding milk as needed to achieve desired consistency.
Stir in chives and season to taste with salt and pepper. Serve with halibut.
