Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 2 cups vegetable broth
  • 2 cups cauliflower florets
  • 1/2 cup cooked black beans
  • 1/2 cup frozen corn
  • 3/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh oregano
  • 1/4 cup freshly squeezed lime juice
  • Salt and pepper to taste

Directions

  1. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for 3 minutes until softened.
  2. Add the cumin, chili powder, and smoked paprika and sauté for 1 minute.
  3. Add the vegetable broth and cauliflower florets and bring to a boil. Reduce the heat and simmer for 5 minutes until the cauliflower is tender.
  4. Add the black beans, corn, cilantro, parsley, oregano, and lime juice and stir to combine. Simmer for 2 minutes.
  5. Season with salt and pepper to taste.
