Ingredients
1 onion, chopped
2 cloves garlic, minced
2 tablespoons olive oil
1/2 teaspoon ground cumin
1/2 teaspoon chili powder

Directions

Add the vegetable broth and cauliflower florets and bring to a boil. Reduce the heat and simmer for 5 minutes until the cauliflower is tender.
Add the black beans, corn, cilantro, parsley, oregano, and lime juice and stir to combine. Simmer for 2 minutes.
Season with salt and pepper to taste.
