Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 cup unsalted butter, softened
- 1/2 cup honey
- 1/4 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
Directions
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and cloves.
- In a large bowl, cream together the butter, honey, and sugar until light and fluffy.
- Add in the egg and vanilla extract and mix until combined.
- Gradually add in the flour mixture and mix until a dough is formed.
- Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
- Preheat oven to 350°F (175°C).
- On a lightly floured surface, roll out the dough to 1/4 inch (6 mm) thickness.
- Cut out the cookies with a 2-inch (5 cm) cookie cutter and place on a parchment-lined baking sheet.
- Bake for 10-12 minutes, or until lightly golden.
- Allow to cool completely before serving.
