Ingredients

  • 2 tablespoons olive oil
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons dry white wine
  • 2 tablespoons freshly squeezed lemon juice
  • 4 (6-ounce) flounder fillets
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté for 2 minutes.
  2. Stir in the oregano, thyme, basil, parsley, pepper, and salt and cook for 1 minute.
  3. Add the wine and lemon juice and bring to a simmer.
  4. Add the flounder fillets and cook, turning once, until the fish is cooked through, about 5 minutes.
  5. Transfer the fish to a plate and sprinkle with the parsley.
  6. Serve immediately.
