Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup chopped frozen spinach, thawed and drained
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1/4 cup shredded mozzarella cheese, for topping

Directions

  1. Preheat oven to 375 degrees F
  2. Place chicken breasts on a cutting board and slice a pocket into each breast.
  3. In a small bowl, mix together mozzarella cheese, Parmesan cheese, spinach, garlic powder, oregano, salt and pepper.
  4. Stuff each chicken breast with cheese and spinach mixture.
  5. Drizzle olive oil in a baking dish and place the stuffed chicken breasts in the dish.
  6. Sprinkle with the remaining mozzarella cheese.
  7. Bake in preheated oven for 25 minutes or until chicken is cooked through and cheese is melted and bubbly.
  8. Serve and enjoy!
