In a large bowl, mix together the ground pork, onion, cabbage, garlic, soy sauce, sesame oil, ginger, sugar, and salt. Mix well until everything is combined.
Lay out the wonton wrappers on a flat surface. Place about 1 tablespoon of the pork mixture in the middle of each wrapper.
Dip your finger in the water and lightly wet the edges of the wonton wrappers. Fold the wrappers in half and press the edges together to seal the pot stickers.
Heat a large skillet over medium-high heat. Add enough oil to coat the bottom of the skillet. When the oil is hot, add the pot stickers in one single layer, making sure not to overcrowd the skillet.
Cook for 3-4 minutes until the bottoms are golden and crisp. Add 1/4 cup of water to the skillet and cover with a lid. Reduce the heat to low and steam for 4-5 minutes, or until the pork is cooked through.
Serve the pot stickers with your favorite dipping sauce.
