Ingredients
1 head of cauliflower, cut into florets
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper
1 bunch of kale, stems removed and leaves chopped
1/4 cup currants
1/4 cup mustard
2 tablespoons honey
1/4 cup olive oil
1/4 cup apple cider vinegar
Directions
Preheat oven to 400 degrees F (205 degrees C).
In a large bowl, combine cauliflower florets, olive oil, salt, and pepper. Toss together until cauliflower is evenly coated.
Spread the cauliflower on a baking sheet and roast for 20 minutes, or until golden brown and crispy.
Meanwhile, heat a large skillet over medium-high heat and add the kale. Sauté for 5 minutes, or until kale is wilted and tender.
In a small bowl, combine currants, mustard, honey, olive oil, and apple cider vinegar. Whisk together until the dressing is smooth. Set aside.
Once the cauliflower is done roasting, combine it with the kale in a large bowl. Add dressing and toss until everything is evenly coated.
Serve warm and enjoy!
