Ingredients

  • 6 ounces penne pasta
  • 2 tablespoons olive oil
  • 1 cup diced onion
  • 1 cup sliced mushrooms
  • 1 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • 1/2 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Directions

  1. Cook the penne pasta according to the package directions.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the onions, mushrooms, bell peppers, and garlic and cook until the vegetables are tender, about 5 minutes.
  3. Add the white wine and vegetable broth and bring to a boil. Reduce the heat to low and simmer for 5 minutes.
  4. Stir in the cream and Parmesan cheese and simmer for another 5 minutes.
  5. Season with salt and pepper to taste.
  6. Add the cooked pasta to the skillet and toss to coat with the sauce.
  7. Serve hot.
