Ingredients

  • 2 pounds boneless chicken thighs, cut into bite-sized pieces
  • 1 onion, diced

  • 1 sweet potato, peeled and cubed
  • 1 cup chopped tomatoes
  • 1/2 cup peanut butter
  • 4 cups chicken broth
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • Fresh cilantro, for garnish

Directions

  1. Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chicken pieces and cook until browned. Remove the chicken from the pot and set aside.

  5. Return the browned chicken pieces to the pot and stir to combine. Simmer for an additional 10 minutes, or until the chicken is cooked through and the flavors have melded together.
